Pina Colada Fruit Salad - cooking recipe

Ingredients
    1/4 c. unsweetened shredded coconut
    1 c. low-fat or nonfat banana yogurt
    1/4 c. pineapple juice
    2 tsp. rum extract
    3 c. fresh or canned fruit of choice
Preparation
    Combine coconut, yogurt, pineapple juice and rum extract in a small glass bowl.
    Stir to blend.
    Fold in fresh or canned fruits just before serving.
    Yield: 8 servings (4 cups).
    Serving Size: 1/2 cup.

    Calories: 75, Fat: 1 g, Sodium: 29 mg. Exchanges per serving: 1 fruit.
