Cranberry Bread - cooking recipe
Ingredients

1 c. cranberries, coarsely chopped
1 fresh orange (and hot water)
2 Tbsp. oil
2 c. whole wheat flour
1 egg
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. honey or sugar
1/2 c. chopped nuts
Preparation

To juice (about 1/2 cup) and 1 tablespoon grated rind of orange, add oil and enough hot water to make 3/4 cup liquid.
Add to sifted dry ingredients.
Blend in honey and egg.
Fold in cranberries and nuts.
Bake in a greased 9 x 5 x 3-inch loaf pan at 325\u00b0 for 50 to 60 minutes.
Cool in pan for 15 minutes; invert on wire rack.
Freezes well.
