German Potato Salad - cooking recipe

Ingredients
    4 lb. potatoes
    1/2 lb. bacon
    1/2 c. sugar
    1 c. vinegar
    medium onion
    parsley flakes
Preparation
    Boil potatoes in skins.
    When cool, peel and dice.
    Fry bacon very crispy and crumble over diced potatoes with chopped onion and parsley flakes.
    Leave half the bacon grease in frying pan and add vinegar and sugar.
    Bring to a boil and simmer 5 or 6 minutes, stirring occasionally, to dissolve sugar.
    Test for proper sweet and sour taste.
    Add more vinegar or sugar, if needed.
    Pour over potatoes and stir from the bottom to be sure the vinegar mixture soaks the potatoes well.
    Keep at room temperature for best taste.
    If refrigeration is needed, remove from the refrigerator at least 1 hour and stir good before serving.
