Colorful Rice Confetti - cooking recipe

Ingredients
    vegetable cooking spray
    4 medium zucchini, thinly sliced
    1 bunch green onions, sliced
    1 (17 oz.) can corn, drained
    1 (16 oz.) can tomatoes (undrained), chopped
    3 c. cooked white or brown rice
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. parsley
    1 tsp. oregano
Preparation
    Coat skillet with cooking spray and heat until hot.
    Add zucchini and onion; saute until crisp-tender.
    Stir in remaining ingredients.
    Cover; reduce heat and simmer approximately 15 minutes.
    Yields 12 servings (about 84 calories per 1/2 cup serving).
