No Apologies Meat Loaf - cooking recipe

Ingredients
    3 Tbsp. butter
    1 small green pepper, finely diced
    1 large celery rib, finely diced
    1 1/2 to 2 lb. ground turkey
    2/3 c. hickory smoked barbecue sauce
    1 1/2 tsp. pepper
    1 large onion, finely diced
    1 small red bell pepper, finely diced
    1/2 tsp. thyme
    1/2 c. rolled oats
    2 eggs, beaten
    3 slices bacon (optional)
Preparation
    In a large skillet, melt the butter over moderate heat.
    Add the onion, peppers, celery and thyme; reduce the heat to low and cook, covered, stirring once or twice, until vegetables are very soft, about 20 minutes.
    Remove from heat.
