Quiche Lorraine - cooking recipe

unbaked 9-inch pie shell
1 egg white
1/4 lb. bacon
1/2 c. diced Swiss cheese
2 c. milk or cream
1/4 tsp. salt
1/8 tsp. white pepper
grating of nutmeg
1 tsp. chopped chives
Preparation

Preheat oven to 375\u00b0.
Brush pie shell with egg white.
Prick well.
Chop bacon into 1-inch lengths.
Fry and drain well.
Scald milk to hasten cooking.
Cool slightly.
Beat together milk, eggs, spices and chives.
Sprinkle bacon and cheese in bottom of pie shell.
Pour custard mixture over bacon and cheese.
Bake 35 to 40 minutes or until top is golden brown.
