Ratatouille - cooking recipe

Ingredients
    1 medium onion, chopped
    2 green peppers, chopped
    5 cloves garlic, chopped
    2 medium eggplants
    4 medium zucchini
    1 can tomatoes
    2 Tbsp. basil
    2 Tbsp. sugar
    1 bay leaf
    handful of fresh parsley
Preparation
    Saute the onion, peppers and garlic in olive oil.
    Peel and dice eggplants.
    Salt the eggplant and let it stand.
    Peel and dice zucchini.
    Wash and drain the eggplant.
    Add to the sauteed mixture, then add zucchini, tomatoes, basil and sugar.
    Season with salt to taste.
    Stir and simmer.
    Add parsley and bay leaf.
