Sweet Vidalia Onion Scallops - cooking recipe

Ingredients
    3 medium Vidalia onions
    2 eggs
    1/4 c. chopped green peppers
    2 Tbsp. chopped pimentos
    1 c. grated Swiss cheese
    1 c. cracker crumbs
    1/4 c. butter
    3/4 c. light cream
    1 tsp. salt
    1/2 tsp. white pepper
    2 Tbsp. butter, melted
Preparation
    Peel and slice onions; melt 1/4 cup butter in skillet.
    Add onions and green peppers together and cook until tender.
    Stir in pimentos.
    Place half of onion mix in shallow baking dish. Sprinkle 1/2 cup cheese and 1/2 cup cracker crumbs.
    Repeat layers of onions and cheese.
    Beat eggs with light cream, salt and pepper. Pour over onions.
    Combine remaining cracker crumbs with 2 tablespoons melted butter.
    Sprinkle over top.
    Bake at 350\u00b0 for 25 minutes or until set.
