Pumpkin Cake Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    2/3 c. pumpkin
    1 tsp. lemon juice
    3/4 c. self-rising flour
    2 tsp. cinnamon
    1 tsp. ginger
    1/2 tsp. nutmeg
    1 c. chopped nuts
    1 c. powdered sugar
    6 oz. cream cheese
    4 Tbsp. margarine
    1/2 tsp. vanilla
Preparation
    Beat eggs on high for 5 minutes.
    Gradually beat in 1 cup sugar.
    Stir in 2/3 cup pumpkin and teaspoon of lemon juice.
    Stir together 3/4 cup flour, 2 teaspoons of cinnamon, 1 teaspoon of ginger and 1/2 teaspoon nutmeg.
    Fold into pumpkin.
    Spread in greased and floured 15 x 10 x 1-inch pan.
    Sprinkle 1 cup nuts on top.
    Bake at 375\u00b0 for 15 minutes.
    Turn out on towel sprinkled with powdered sugar.
    Roll up cake and towel together.
    Cool. Unroll for filling.
    Trim around edge.
    Beat until smooth the powdered sugar, cream cheese, margarine and vanilla.
    Sprinkle with powdered sugar.
    Roll up and chill well.
    Slice and eat.
