Kim'S Carrot Cake - cooking recipe

Ingredients
    2 c. self-rising flour
    2 c. shredded carrots
    4 large eggs
    1 1/2 c. sugar
    1 1/2 c. oil
    3/4 c. crushed pineapple
    1 Tbsp. cinnamon
    1 tsp. vanilla extract
    1/2 c. chopped walnuts
Preparation
    Mix eggs and sugar. Add cinnamon and vanilla; mix well. Add oil, then flour and mix well. Stir in carrots, pineapple and nuts. Preheat oven to 350\u00b0. Grease and flour 8 x 11 baking pan. Fill and bake for 35 to 40 minutes. Cool when done. Use Cream Cheese Icing when cooled.
