Eggplant Casserole - cooking recipe

Ingredients
    1 Tbsp. cooking oil
    1/4 c. water
    1/2 c. green pepper, chopped
    1 c. tomatoes, chopped
    1 c. eggplant, chopped
    1/2 c. onion, chopped
    1/4 tsp. curry powder
    1/2 tsp. thyme
    1/2 tsp. basil
    1/2 tsp. minced garlic
    1/8 tsp. pepper
    1/2 tsp. salt
    1 lb. ground meat
    1 c. shredded cheese
    1 can cream of mushroom soup
    wheat germ
Preparation
    Place oil in a deep skillet and add water, green pepper, tomatoes, eggplant, onion, garlic and spices.
    Cook at medium heat until most of water is absorbed.
    Lower heat and simmer, stirring often.
    Cook until vegetables are tender.
