Sugar Free Banana Bread - cooking recipe

Ingredients
    3 medium ripe bananas
    1 large egg white
    3/4 c. frozen unsweetened apple juice concentrate, thawed
    1/4 c. margarine, melted
    2 1/4 c. whole wheat flour
    1 tsp. baking soda
    1/2 c. chopped walnuts
    2 tsp. vanilla
    cinnamon
Preparation
    Mash bananas.
    Mix in egg white, apple juice, melted margarine and vanilla.
    Add flour, baking soda and cinnamon; mix well.
    Stir in walnuts.
    Pour into 8 1/2 x 4 1/2-inch loaf pan that has been sprayed with nonstick vegetable coating.
    Bake at 325\u00b0 for 45 to 50 minutes.
    Do not overbake.
    Leave in pan for 10 minutes and remove. Cool.
    Wrap in plastic wrap overnight so the banana flavor will develop.
