Pepper Steak And Rice - cooking recipe

3 c. cooked rice
1 lb. round steak (about 1/2-inch thick)
1 Tbsp. paprika
2 cloves garlic, crushed
2 Tbsp. butter
2 green peppers, cut into strips
1/4 c. water
1/4 c. soy sauce
1 1/2 c. beef broth
1 c. sliced green onion (with stems)
2 Tbsp. cornstarch
2 large fresh tomatoes, sliced into 1/8ths
Preparation

While rice is cooking, pound steak to 1/4-inch thickness; cut into strips.
Sprinkle meat with paprika and set aside.
Using large skillet, brown meat in butter.
Add garlic and broth.
Cover and simmer for 30 minutes.
Stir in onions and pepper.
Cover and cook for 5 minutes.
Blend cornstarch, water and soy sauce.
Stir into meat mixture.
Stir until clear and thickened (about 2 minutes).
Add tomatoes; stir gently.
Serve over bed of rice. Makes about 6 servings.
