Pam'S Carrot Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 small onion, chopped fine
    1 medium potato, diced
    1 lb. carrots, chopped
    3 c. vegetable stock
    1 pinch sugar
    2/3 c. half and half
    salt and pepper
Preparation
    Melt butter in pan.
    Add onion, potato and carrots.
    Cover and cook on low heat for 10 minutes.
    Add stock and sugar.
    Boil, then simmer for 30 minutes.
    Puree in blender.
    Return to pan and stir in half and half and heat (do not boil).
