Corn Oysters - cooking recipe

Ingredients
    2 egg yolks, beaten
    2 c. corn, drained
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. plain flour
    1/4 tsp. baking powder
    2 egg whites, stiffly beaten
    vegetable oil (for frying)
Preparation
    Combine egg yolks, corn, salt and pepper in a bowl. Stir in flour and baking powder.
    Fold in beaten egg whites.
    Heat 2 tablespoons oil in a large skillet over moderately high heat. Drop batter by tablespoonfuls into skillet and cook until golden brown on underside.
    Turn and brown.
    Remove and keep hot while cooking rest.
    Add more oil as needed. Serves 12.
