Sweet Potato Fritters - cooking recipe

Ingredients
    1 c. plus 2 Tbsp. all-purpose flour
    1 tsp. baking powder
    2/3 c. milk
    2 eggs, beaten
    2 Tbsp. butter or margarine, melted
    4 slices bacon, cooked and crumbled
    2 c. shredded uncooked sweet potato
    vegetable oil
    maple syrup
Preparation
    Combine flour and baking powder; stir well. Add milk, eggs and butter. Stir until smooth. Add bacon and sweet potato, stirring well.
    Heat 3 to 4-inches of oil to 375\u00b0 in a Dutch oven. Carefully drop batter by rounded tablespoonfuls into hot oil. Cook only a few at a time, turning once.
    Fry 2 minutes or until fritters are golden brown. Drain well on paper towels. Serve warm with maple syrup.
    Yields about 3 dozen.
