Funnel Cakes - cooking recipe
Ingredients

3 eggs, well beaten
2 c. milk
4 c. sifted plain flour
1/3 c. sugar
1/2 tsp. salt
1 Tbsp. baking powder
1/2 tsp. vanilla
Preparation

Beat eggs with milk and gradually beat in flour, salt and baking powder. Beat until smooth. Holding the opening of a funnel closed with your finger, fill the funnel with batter.
Open the end of the funnel and allow dough to run out in a stream into deep hot fat (375\u00b0 on frying thermometer), moving funnel around starting at the center of pan and swirling batter outward in a circle.
Fry 2 or 3 minutes or until brown.
Drain on absorbent paper and sprinkle with confectioners sugar.
Makes about 30 cakes, depending on size.
(Can cut recipe in half.)
