Mrs. Christopher'S Cheese Potato Casserole - cooking recipe
Ingredients

6 medium Irish potatoes
3 c. grated sharp Cheddar cheese
2 eggs, beaten
1 1/2 c. milk
1 1/4 tsp. salt
2 Tbsp. minced onions (optional)
Preparation

Peel and cook potatoes until tender.
Drain and mash well. Add 1 1/2 cups of the Cheddar cheese, eggs, milk, salt and onions, blending thoroughly.
Pour in casserole and top with the remaining cheese.
Cook at 350\u00b0 until brown, about 35 to 40 minutes.
Can be stored uncooked in deep freeze or refrigerator until time to be used.
