Diabetic Carrot-Raisin Salad - cooking recipe
Ingredients

2 c. grated carrots
1 c. unsweetened crushed pineapple, drained
1/2 c. raisins
1 (8 oz.) carton plain low-fat yogurt
7 lettuce leaves (optional)
8 pkg. Equal
Preparation

Combine carrots, pineapple and raisins; mix well.
Chill for 2 or 3 hours.
Stir in yogurt.
Serve on lettuce leaf, if desired. Yields 7 servings (each serving is 1/2 cup).
