Cowboy Coffee Cake - cooking recipe
Ingredients

1 (12 oz.) jar apricot, peach, strawberry or raspberry preserves
2 c. Bisquick baking mix
2 Tbsp. sugar
1 egg
2/3 c. water or milk
Preparation

Heat oven to 400\u00b0.
Spread preserves in round layer pan, 9 x 1 1/2-inches.
Combine remaining ingredients; beat vigorously for 1/2 minute.
Spread batter evenly over preserves to edge of pan. Bake 20 to 25 minutes.
Invert onto heatproof plate.
Leave pan over cake a few minutes.
Serve warm.
Makes 8 servings.
