Chicken Salad - cooking recipe
Ingredients

3 chicken breasts
1/2 c. diced celery
1/2 c. diced apple (optional)
1/2 c. sweet pickle, chopped
2 Tbsp. chopped onion
1/4 c. pimento
3 hard-boiled eggs, chopped
1/4 c. pecans, chopped (optional)
3/4 c. mayonnaise
Preparation
-
Boil chicken until tender.
Let chicken cool and remove from bones.
Cut into bite-sized pieces.
Combine mayonnaise, eggs, celery, onion,
sweet
pickles, pimento, diced apple and chopped pecans.
Mix with
chicken
and season to taste.
Pour into mold; refrigerate.
Serve
on
lettuce
leaves
or
as a spread for sandwiches.
Yields 8 to 10 servings.
