Ingredients

2 eggs, separated
1/2 c. sugar
2 c. milk
1 c. cooked rice
1 Tbsp. butter, melted
1/2 c. raisins (optional)
2 Tbsp. confectioners sugar
1/4 tsp. ground nutmeg
Preparation

Beat the egg yolks and mix in the sugar and milk.
Mix in butter and raisins.
Pour into buttered 1-quart baking dish.
Beat the egg whites until frothy.
Beat in confectioners sugar and spread on top of rice mixture.
Sprinkle with nutmeg.
Bake at 325\u00b0 for about 30 minutes.
