Spicy Pork Loin With Pineapple-Papaya Salsa - cooking recipe
Ingredients

1 Tbsp. minced garlic
2 tsp. paprika
1 1/2 tsp. salt
1 1/2 tsp. freshly ground black pepper
1 tsp. oregano
3/4 tsp. ground red pepper
1 boneless center cut pork loin roast (6 lb.)
Preparation

Combine seasonings.
Rub over pork.
Cover with plastic wrap and refrigerate overnight.
Preheat oven to 425\u00b0.
Unwrap pork; place on a rack in roasting pan.
Place in oven and reduce heat to 325\u00b0.
Roast 2 hours and 15 minutes or until thermometer reaches 155\u00b0 to 160\u00b0.
Let stand 10 minutes.
Slice and serve with the salsa.
