Walnut Chicken Stir-Fry - cooking recipe

Ingredients
    3 Tbsp. soy sauce
    1 lb. skinned boneless chicken, cut into 1-inch pieces and cooked
    1 c. California walnuts
    3 Tbsp. corn oil
    1 large garlic clove, crushed
    1/2 c. onion, diced
    1 large green pepper, diced
    1 c. rice, cooked
Preparation
    Marinate chicken 15 minutes in soy sauce.
    In large skillet, toast walnuts in 1 teaspoon oil over low heat 15 minutes.
    Heat 1 tablespoon oil, garlic and onion for 2 minutes.
    Add green pepper and cook.
    Add marinade, chicken and rice to the vegetable mixture and cook 5 minutes.
    Add walnuts and serve.
    Makes 4 servings.
