Zucchini Bites - cooking recipe

Ingredients
    4 small unpeeled zucchini, cut into 1-inch slices
    1 Tbsp. oil or water
    1/3 c. chopped tomato
    1/3 c. fresh chopped mushrooms
    1/3 c. chopped green pepper
    2 tsp. minced black olives
    1/3 c. finely chopped onion
    2 garlic cloves, chopped, or 1 tsp. garlic powder
    1 to 1 1/2 tsp. basil
    2 tsp. fresh or dried oregano
    1/2 tsp. thyme
    salt (optional)
    Parmesan cheese or nondairy Parmesan cheese
Preparation
    Cook zucchini slices in steamer basket over boiling water for 3 minutes.
    Cool slightly and drain well.
    Working carefully, scoop some of the pulp out of each slice, forming a small cup to hold filling.
    Be sure to leave small amount of pulp in bottom. Set aside.
