Pioneers Johnny Cake - cooking recipe

Ingredients

2 c. corn meal
1 c. flour
1 tsp. salt
3 Tbsp. sugar
3 Tbsp. baking powder
1/2 c. milk
1/2 c. water
2 eggs
1/3 c. melted butter

Preparation

Sift first five ingredients together (sifting several times makes it better).
Beat eggs into milk and water and add butter. Stir liquid into dry mixture; add more liquid if needed.
Bake in muffin pans or skillet for 20 minutes at 400\u00b0.
Makes one dozen large muffins.
(Some prefer meal and flour half and half.)
