Squash Puppies - cooking recipe
Ingredients

5 medium yellow summer squash
1 small onion, minced
3/4 c. sharp Cheddar cheese, grated
1/2 c. self-rising corn meal
2 Tbsp. plain flour
1 egg, well beaten
Preparation

Cook squash in salted boiling water until very tender; drain well.
Completely mash squash and add onion, cheese, corn meal, flour and egg.
Mix until blended and the consistency of hush puppies or croquettes.
More meal may be needed, but do not get mixture stiff.
Fry in medium-hot vegetable oil until cooked through and browned.
Drain well on paper towel.
This mixture can be made and refrigerated, then cooked anytime within 3 days.
