Zippy Zucchini Skillet - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    4 medium zucchini, thinly sliced
    1 medium onion, chopped
    1 (16 oz.) can whole kernel corn, drained
    1 (4 oz.) can chopped green chiles
    2 tsp. seeded, chopped jalapeno peppers (optional)
    1/4 tsp. salt
    1/8 tsp. garlic powder
    1/2 c. (2 oz.) shredded Cheddar cheese
Preparation
    Heat oil in a large skillet; saute zucchini and onion 10 minutes or until tender.
    Stir in remaining ingredients except cheese.
    Cook, stirring occasionally, until thoroughly heated. Stir in cheese.
    Yield:
    6 servings.
    (Make day before, enhances flavor.)
