Zucchini Sausage Pie - cooking recipe
Ingredients

1 lb. bulk Italian sausage (sweet or hot; may be half and half)
1 1/2 c. shredded zucchini
1 c. shredded Swiss cheese
1 c. Ricotta or cottage cheese
4 eggs, beaten
1/2 tsp. salt (optional)
1/4 tsp. pepper
1 (9-inch) unbaked pie crust
Preparation

Brown sausage and drain off fat.
Press liquid from zucchini between double layers of paper towels.
Combine all ingredients in a large bowl and mix thoroughly.
Set aside.
Preheat oven to 400\u00b0 and bake pie crust 10 minutes.
Remove from oven; reduce oven temperature to 375\u00b0.
Pour mixture from bowl into pie crust.
Bake for 45 to 50 minutes or until knife inserted in center comes clean.
Let stand for at least 10 minutes before serving.
