Beet Summer Delight(Serves 4) - cooking recipe
Ingredients

1/3 c. coarsely chopped parsley
1 can sliced or chopped beets (fresh beets when in season)
1 lb. spaghettini
1/4 head escarole, chopped
1 can anchovies
1/3 c. olive oil
1/2 tsp. salt
dash of black pepper
3 cloves garlic
fresh basil or parsley (to garnish)
Preparation

In large skillet, simmer oil, garlic and anchovies, stirring gently.
Remove from heat when garlic is golden and set aside. Add beets with its juice, parsley, chopped escarole, salt and pepper.
Let all ingredients marinate while cooking spaghettini.
