Squash Or Pumpkin Soup - cooking recipe
Ingredients

3 T. chopped onion
2 T. melted reduced fat butter
1 c. cooked and mashed squash or pumpkin
2 c. chicken broth
2 c. half and half
salt and pepper to suit your taste
hollowed and baked squash or pumpkins
Toasted pumpkin seeds (optional)
Preparation

Saut onion in butter.
Add mashed squash or pumpkin and mix well.
Slowly add broth and half and half, stirring constantly. Season to taste and bring to boiling point, stirring constantly. Serve in hollowed and baked small pumpkins or squash.
Sprinkle toasted pumpkin seeds on pumpkin soup just before serving.
