Savannah Red Rice - cooking recipe

Ingredients
    6 slices of bacon or ham chunks
    16 oz. can tomato paste
    1 can tomatoes
    2 1/2 c. raw long grain rice
    1 medium to large onion, chopped
    6 or more stalks of celery, diced
    pinch of sage
    pinch of thyme
    1 small green pepper, chopped fine
    salt and pepper to taste
Preparation
    Fry the bacon or ham in a heavy saucepan. Add tomato paste and all other ingredients.
    Cook until vegetables are tender. When everything is mixed, put bacon slices on top.
    Cook in oven until mixture is dry.
    Should take about 45 minutes.
