18 Bean Soup - cooking recipe

Ingredients
    1 1/2 c. mixed beans
    1 tsp. salt
    water
    meaty ham hock and ham
    1 c. barley
    1 can Ro-Tel tomatoes
    1 large sliced onion
    1 clove garlic
    juice of 1 lemon
    salt and pepper to taste
Preparation
    Cover mixed beans and salt with water and soak overnight. Drain.
    Add 5 more cups water, meaty ham hock and ham and barley. Boil slowly 2 1/2 to 3 hours.
    Add tomatoes, salt, pepper, sliced onion, clove garlic and juice of lemon.
    Simmer for 1 hour longer.
