Zucchini Relish - cooking recipe

Ingredients
    10 to 14 c. peeled zucchini
    4 c. chopped onions
    5 tsp. salt
    2 1/4 c. vinegar
    1 tsp. nutmeg
    1 red and green pepper, chopped
    2 1/2 c. sugar
    2 Tbsp. cornstarch
    1 tsp. dry mustard
    1 Tbsp. turmeric
Preparation
    Grind zucchini and onion; add salt.
    Let stand overnight; drain, rinse in cold water; drain.
    Combine vinegar, nutmeg, peppers, sugar, dry mustard, cornstarch and turmeric.
    Bring to a boil; add zucchini and cook for 30 minutes.
    Stir often.
    Ladle in hot jars and seal.
    Place in canner, cover jars with hot water. Boil for 10 minutes.
