Lemon Sweet Potatoes - cooking recipe
Ingredients

4 lb. sweet potatoes
3 Tbsp. lemon juice
1 tsp. salt
1/2 stick (1/4 c.) butter, softened
2 egg yolks
pepper to taste
lemon slices
Preparation

In a bowl, combine sweet potatoes (cooked, peeled and mashed), lemon juice and salt.
Beat in the butter, egg yolks and pepper to taste.
Transfer the mixture to a buttered 1 1/2-quart casserole, top it with lemon slices and brush the top with melted butter. Bake the casserole in a preheated, moderately slow oven (325\u00b0) for 45 minutes or until it is heated through.
Serves 8.
