Artichoke Rice Medley - cooking recipe

Ingredients
    1 (8 oz.) box chicken flavor Rice-A-Roni
    2 (6 oz.) jars marinated artichoke hearts
    1/4 c. pimento stuffed olives
    2 large scallions, sliced
    1 (8 oz.) can water chestnuts
    1/3 c. mayonnaise
    1/4 tsp. curry powder
    1/4 tsp. salt
    freshly ground pepper
Preparation
    Cook rice according to package directions, using 2 1/2 cups water.
    Remove to large bowl.
    Drain artichoke hearts, reserving marinade.
    Chop coarsely the hearts, olives and
    drained and rinsed water chestnuts; add to rice.
    In a small bowl, mix reserved marinade, mayonnaise, curry powder, salt and pepper; stir into warm rice.
    Serve warm or chilled.
