Peanutty Supreme Squash - cooking recipe

Ingredients
    2 lb. yellow crookneck squash
    2 oz. pimento, drained and diced
    2 Tbsp. grated onion
    1 can cream of chicken soup
    2 carrots, grated
    1 c. sour cream
    1 (7 oz.) pkg. herb stuffing mix
    1 stick margarine, melted
    1 c. chopped peanuts
    salt if needed
Preparation
    Slice squash and cook in small amount of water until tender; drain and mash.
    Add pimento, onion, carrot, soup and sour cream; blend together.
    Toss stuffing mix, margarine and nuts together. Turn half of stuffing mixture into 9 x 11 x 2-inch casserole dish. Pour in squash mixture evenly.
    Top with remaining crumb mixture. Bake at 375\u00b0 for 30 minutes or until bubbly.
