Stuffed Eggplant - cooking recipe
Ingredients

eggplant
salt
thinly sliced onions
fresh garlic
small slices Parmesan cheese
4 to 6 slices bacon
olive oil
Preparation

Peel eggplant whole.
Slit lengthwise 1-inch deep and 1 1/2-inches apart.
Salt entire eggplant.
Stuff into slits the thinly sliced sweet onions, slices of fresh garlic, small slices of brick Parmesan cheese and last with slices of raw bacon.
Salt again.
Place small amount of olive oil and 1/4 cup water in bottom of casserole.
Bake in 350\u00b0 oven for 45 minutes.
(Longer for more than 1 eggplant.)
