Cajun Corn Bread - cooking recipe
Ingredients

1 c. yellow corn meal
1/2 tsp. baking soda
1 tsp. salt
1/4 c. cooking oil
1 medium onion, chopped
3 jalapeno peppers, chopped
1 c. sour cream
2 eggs
1 can creamed corn
1 c. shredded Cheddar cheese
Preparation

Heat 1/4 cup cooking oil in iron skillet in 400\u00b0 oven.
While oil is heating, stir together in mixing bowl all ingredients, except Cheddar cheese.
Pour half of batter into heated skillet and top with 1/2 cup shredded Cheddar cheese.
Pour remaining batter on top and sprinkle on other 1/2 cup shredded Cheddar cheese.
Bake at 400\u00b0 for 35 or 45 minutes, until lightly browned on top.
