Penne With Vodka And Tomato Cream Sauce - cooking recipe

Ingredients
    1 Tbsp. butter
    1 Tbsp. olive oil
    1 medium yellow onion, chopped
    1 (28 oz.) can plum tomatoes, drained and chopped
    1 c. whipping cream
    1/4 c. vodka
    1/2 tsp. crushed red peppers
    1 lb. cooked penne (mostaccioli) pasta
    fresh grated Parmesan cheese
    chives
Preparation
    Saute onion in oil and butter until translucent. Add tomatoes and simmer until the juice from the tomatoes is reduced by half, stirring frequently. Add cream, vodka and peppers. Simmer until thickened. Season with salt and pepper. Toss with pasta and top with Parmesan cheese and chives. Serves 4.
