Date-Carrot Bread - cooking recipe

Ingredients
    1/2 c. butter
    1 c. firmly packed brown sugar
    3 eggs
    3 Tbsp. lemon juice
    2 c. grated carrots
    1 c. sifted all-purpose flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1 c. diced dates
    1 tsp. lemon rind
Preparation
    Cream butter and sugar together.
    Add eggs, one at a time, beating well after each addition.
    Add lemon juice, rind and grated carrots; blend well.
    Sift dry ingredients together, then add to carrot mixture and blend.
    Add diced dates; mix until dates are well coated.
    Generously grease an 8 x 4-inch loaf pan or three 5 x 3-inch loaf pans.
    Spoon batter into prepared pan or pans.
    Bake in preheated oven at 350\u00b0 for 30 to 40 minutes (small loaves) or 45 to 50 minutes (large loaf).
