Herring-Stuffed Beets - cooking recipe

Ingredients
    24 small whole cooked beets
    1 (6 oz.) jar pickled herring tidbits
    1/4 c. sour cream
    dill weed sprigs (garnish)
Preparation
    With small melon scoop, hollow out top of each beet.
    Drain and coarsely chop herring and fill each beet with 1/2 teaspoon. Dot with sour cream and garnish with dill weed sprigs.
    Serve cold.
    Makes 6 servings.
