Ingredients

14 lb. tomatoes (unpeeled)
2 c. chopped celery
3 c. chopped onion
3 chopped green peppers
1 to 2 cloves garlic
2 c. summer squash (optional)
2 Tbsp. oregano
1 Tbsp. basil
1 Tbsp. thyme
Preparation

Place first 6 ingredients in blender.
Add seasonings to taste.
Simmer over low heat until thick.
(The summer squash aids as thickener and extender.)
Can be frozen or put in jars, sealed and processed in hot water bath for 30 minutes.
