Potato Rolls - cooking recipe
Ingredients

2/3 c. shortening
2/3 c. sugar
2 1/2 tsp. salt
1 c. cooked mashed potatoes
2 eggs
2 pkg. yeast
1 1/2 c. warm water, divided
6 to 6 1/2 c. flour
Preparation

Cream shortening; gradually add sugar, beating until fluffy. Add potatoes, salt and eggs.
Dissolve yeast into 2/3 cup warm water.
Add yeast mixture to creamed mixture.
Beat until smooth. Gradually stir in flour to make a soft dough.
Knead dough for about 3 minutes and place in a greased bowl.
Cover and let rise in a warm place for 1 1/2 hours.
Punch dough down and knead lightly.
Shape into balls and place onto a greased pan.
Cover and let rise for about 30 minutes.
Bake at 375\u00b0 for 20 to 25 minutes.
Makes about 45 rolls.
