Pumpkin Bran Muffins - cooking recipe
Ingredients

1 1/2 c. flour (wheat)
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. lite salt
1 tsp. cinnamon
2 Egg Beaters
1 c. canned pumpkin
1 c. Raisin Bran cereal or 1 c. shredded bran flake cereal
3/4 c. skim milk
1/2 c. light corn syrup
Preparation

Spray 12 muffin cups with a nonfat cooking spray.
In a medium bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon.
In a
large bowl, using a wire whisk, beat Egg Beaters. Stir in pumpkin, cereal, milk and corn syrup.
Add to flour mixture. Stir until well blended.
Spoon into prepared muffin cups. Bake at 400\u00b0 for 18 to 20 minutes. Cool in pan 5 minutes. Yields 12 muffins.
