Arroz Con Pollo - cooking recipe
Ingredients

2 1/2 to 3 lb. chicken pieces
2 Tbsp. butter
1 c. rice
1/4 tsp. garlic powder
1 large onion, thinly sliced
2 c. mild salsa
1 c. sliced mushrooms
1 (10 oz.) pkg. frozen peas
1 3/4 c. water mixed with 2 cubes chicken bouillon
1 tsp. salt
1/2 tsp. basil leaves
1/2 tsp. cumin
Preparation

In an electric skillet, brown washed chicken well on all sides.
Sprinkle rice between chicken pieces.
In a large bowl, combine all remaining ingredients, except peas.
Pour mixture over chicken and rice.
Simmer, covered, 30 minutes.
Scatter peas all over chicken.
Cover and simmer 15 additional minutes.
Serves 4 to 6.
