Seafood Gumbo - cooking recipe

Ingredients
    2 lb. (about 6 c.) seafood (shrimp, oysters, fish, crab or combination of these)
    4 Tbsp. canola oil
    4 Tbsp. flour
    1 c. chopped onion
    1 clove garlic, minced
    1 (No. 303) can crushed tomatoes
    1 (16 oz.) can tomato sauce
    1 lb. okra (2 to 3 c.), chopped into rounds
    1 tsp. cayenne pepper
    1 Tbsp. file (if available)
    2 bay leaves
    salt and pepper to taste
    2 qt. stock (from seafood)
Preparation
    Parboil seafood, reserving stock.
    Make roux by browning flour in oil.
    Add onion and garlic, stirring frequently until slightly wilted.
    Add tomatoes, sauce, seafood stock and seasonings.
    Stir well; simmer for about 20 minutes.
    Add okra and additional stock or water, if necessary.
    Bring to boil.
    Add seafood; simmer another 10 minutes.
    Serve over hot rice.
