Black Bean Chili Express - cooking recipe

Ingredients
    4 (15 oz.) cans black beans, rinsed and drained
    3 c. mild salsa, about 1 1/2 (12 oz.) jars
    1 (11 oz.) can vacuum packed corn kernels, drained
    1 (12 oz.) pkg. corn muffins
    1 c. grated jalapeno Jack cheese (4 oz.)
Preparation
    Heat oven to 425\u00b0.
    In 4-quart saucepan over high heat, cook beans, salsa and corn for 6 to 7 minutes stirring frequently until hot.
    Meanwhile, arrange muffins on ungreased cookie sheet and place in oven to heat through for 5 to 8 minutes.
    Remove bean mixture from heat.
    Stir in 3/4 cup grated cheese until melted. Remove muffins from oven and sprinkle, if desired, with 1 tablespoon remaining cheese.
    Serve chili sprinkled with remaining cheese and accompanied by hot muffins.
    Makes 6 servings.
