Blender Pesto - cooking recipe

Ingredients
    2 cloves garlic, peeled
    2 c. fresh basil leaves, torn if they're large
    1/2 c. olive oil
    2 Tbsp. pine nuts
    1/4 to 1/2 tsp. salt
    1/2 c. Parmesan cheese (optional)
Preparation
    Put the garlic in the blender and whirl at high speed. Add the basil, olive oil, nuts and salt and mix until well blended, but still with a bit of texture. Use a spatula to scrape down the sides and blend once more. Check for seasoning. Remove to a jar. Stir in the cheese by hand when ready to add to a dish. Makes about a cup.
