Raisin Pie - cooking recipe

Ingredients
    1 c. raisins
    2 c. water
    4 Tbsp. tapioca
    1/2 c. sugar
    1/4 tsp. salt
    1 slightly beaten egg
    1 Tbsp. butter
    2 tsp. lemon juice
    1 tsp. grated lemon rind
    1 (9-inch) cooked pie shell
Preparation
    Add raisins to water and cook 30 minutes, drain.
    Add enough water to juice to make 2 cups.
    Combine tapioca, sugar, salt and liquid in saucepan and mix well.
    Bring mixture quickly to a full boil over direct heat, stirring constantly and pour small amount of slightly beaten egg, stirring vigorously.
    Return to saucepan and bring just to a boil.
    Remove from fire.
    Add butter, lemon juice and rind to raisin mixture.
    Cool slightly before filling shell.
    Chill if desired and cover with whipped cream.
